Ingredients of Chocolate and cheese cake with pistachios
- 125 grams of pastry flour
- 250 grams of sugar (divide in two for the biscuit mix and cream cheese)
- 25 grams of 100% cocoa powder
- 4 eggs
- 1 pinch salt
- 250 grams of cream cheese (Philadelphia type)
- 250 grams of liquid cream to mount
- 250 grams of milk
- 1 envelope curd
- 50 grams of shelled pistachios
To decorate
- 150 grams of chocolate for dessert
- 50 grams of water
- 50 grams of butter

Preparation of chocolate and cheese cake with pistachios
- Preheat oven to 200°C.
- We will start by crushing the peeled pistachios, add them to the Thermomix bowl, reserve a few to decorate, program.
- 5 seconds / Speed 4
- Remove the crushed pistachios from the Thermomix bowl and reserve. Then place the butterfly on the blades to beat the cake. Incorporate 125 grams of sugar and the eggs, program.

- Immediately add the pastry flour, the cocoa powder, previously sifted (sifted or passed through the strainer to remove any impure residue) and the pinch of salt, we program

- Add the mixture to the baking pan, buttered and floured, or lined with baking paper. If you have a silicone mold, just spray a little oil.
- Bake for 8 to 10 minutes at 180°C.
- Verify with a wooden stick the cooking of the cake, if the stick comes out clean and dry, the cake is ready.
- Unmold, let cool and cut into 2 or 3 capable of 1.5 cm. (Depends on the thickness of the cake). Place the bottom layer back into the pan, reserving the other half.
