Ingredients
2 or 3 spider crabs alive or already cooked (they can also be crab)
1 glass of tomato sauce (or fried tomato)
½ glass white wine (I put cava, I had no wine)
50 grams of olive oil
20 grams of butter
1 glass of brandy
bay leaves
2 grated carrots
3 grated tomatoes
2 cloves of garlic
2 onions
1 leek
Water
fine salt
Coarse salt
Breadcrumbs (if it is Provencal style it will be much better)
Preparation
We begin the preparation of this rich recipe, cooking the spider crabs in the way they are usually cooked, in water and coarse salt.
If you already have the crabs cooked, and at room temperature, it is time to clean them and remove the gills and whiskers (this is waste).
Then, remove the legs, empty the inside of the spider crab and place it in a bowl, also the coral and all its juice, pour this into another bowl.
