- 360 grams of monkfish
- 260 grams of fresh prawns
- 210 grams of monkfish bones
- 310 grams of clams clean
- 210 grams of white fish remains (heads and bones)
- 33 grams of brandy
- 1.2 liters of water
- 1 fish stock cube
- Salt to taste
- 75 grams of olive oil
- 160 grams of chopped leek
- 110 grams of chopped onion
- 130 grams of chopped carrot
- 205 grams of tomato crushed
- 105 grams of bread
- 1 apple, peeled and chopped
- 3 small garlic
Preparation
- When you have gathered all those ingredients, follow the steps below:
- Start by pouring the remains of the white fish, the monkfish bones and about 820 grams of water into the robot’s glass. Put the Thermomix to work
- spoon speed / reverse turn / 100º / 10 minutes.
- Strain the contents of the glass and reserve.
- Peel the prawns. The shells and heads of these add them to the robot’s glass along with the rest of the water. Program a
- speed 4 / 100º / 7 minutes.
- Strain the contents of the glass and reserve it as well.
- Wash the glass and then add the onion, apple, leek, garlic and carrot. Program a
- speed 5/5 seconds.
- Next, add both the oil and the tomato. Put the robot to work
- speed 1 / 120º / 7 minutes.
- Add the bread and brandy to the glass. Kitchen to
- speed 1 / Varoma temperature / 3 minutes.
- Then, add the stock cube, the reserved shrimp stock as well as the fish stock. The latter, make sure that it does not exceed the maximum mark of the glass.
