Ingredients for cold apple and leek soup with thermomix

  • 4 leeks in pieces (only the white part)
  • 3 apples
  • 200 grams of cream for cooking
  • 30 grams of extra virgin olive oil
  • 30 grams of butter
  • 800 grams of water
  • 1 vegetable broth tablet

Preparation of cold apple and leek soup with thermomix

  1. put the leeks cut into pieces in our Thermomix bowl and grind
  2. 5 seconds / speed 5
  3. then add the apples cut and peeled into pieces, the oil, the butter and sauté
  4. 12 minutes / 120ºC / speed 1
  5. we add 200 grams of water and a tablet of dissolved vegetable broth and program
  6. 1 minute / progressive speed 6 to 10
  7. we put the rest of the water and program
  8. 25 minutes / 100ºC / speed 1
  9. Add the cream and blend everything again.
  10. 30 seconds / progressive speed 6 to 10
  11. we put all soup in a bowl and chill it in the fridge
  12. we put a little virgin olive oil before serving on each plate or bowl and that’s it
