Banoffee pie, is a cake of English origin based on banana, cream and toffee, very sweet and really good.
150g of common flour
3 egg yolks
50 g of powdered sugar
1 pinch of salt
75 g of butter
½ teaspoon vanilla extract
Stuffed with caramel:
200 g of white chocolate, in small pieces
1 can (395 g) of condensed milk
125 g of butter
160 g of brown sugar
125g of golden syrub (it is a mixture of sugar water and lemon juice in its homemade version, they sell it made)
½ teaspoon flakes of sea salt
To decorate:
3 bananas
300 g of double cream
100 g of dark chocolate, in small chips with a vegetable peeler
Preheat the oven to 180 ° C. Put our flour thermomix, egg yolks, sugar, butter, vanilla extract and salt to taste and mix
20 seconds / speed 6.
Wrap the dough in plastic wrap and let it cool, reserving it for about 30 minutes. Once cooled, place it on a floured surface.
Prepare a pie dish about 22 cm. and put the dough, punctured with a fork and placing a sheet of greaseproof paper on top.
Bake for 15 minutes. Remove and let cool.
Caramel processing
To make the fudgey candy, place the white chocolate in our Thermomix bowl and program
5 seconds / speed 9.
Pour into a separate container until later. Pour condensed milk, butter, brown sugar and golden syrub into Thermomix bowl. We program
20 minutes / varoma / speed 3.
Add the chopped white chocolate and mix
20 seconds / speed 4.
Pour over the cold dough and let stand at room temperature for at least 4 hours. Insert the butterfly into the thermomix and insert the cream and put.
45 seconds / speed 3 (Until it is mounted.)
Decorate.
Chop the bananas into slices and decorate with the cold caramel. Cover with the whipped cream and sprinkle some chocolate shavings
