2 good sized aubergines
1 onion
200 grams of tuna (canned or natural)
50 grams of light cheese spread
2 boiled eggs
olive oil to taste
Salt and pepper to taste
Grated cheese of your choice to gratin

To begin we must cook the aubergine pulp a little, you can do it in 2 ways, depending on the time you have, you can cook it in the microwave or in the conventional oven.
Whichever option you choose will be great, you just have to do the following, cut the aubergines in halves (lengthwise), place them in a baking dish, make some cross cuts on each half, sprinkle a little olive oil, salt and pepper to taste.
The cooking time in the oven varies, if it is in the microwave between 5 – 10 minutes (wrapping the source in plastic wrap and making some holes so that the steam escapes) And the time in the oven, between 20 – 25 minutes.
Once cooked, remove the pulp and reserve (the shell will be our hulls to fill)
Now in the glass of the thermomix, add the onion cut into pieces to crush it, program.

Then add a little olive oil and fry, program.

To the fried onion, add the eggplant pulp, the drained tuna, the spreadable cheese, the boiled eggs and another touch of salt and pepper, mix everything until ready.

Once all the ingredients have been mixed and a homogeneous mixture is left, fill the halves of the aubergines generously.
Sprinkle cheese over each eggplant. Gratin on the grill or in an oven at 180° C for 10 minutes (time depends on the intensity of your oven or grill)
