Air Fryer Chocolate Chip Banana Pancakes
🍌 3 medium ripe bananas, mashed
🌾 190 g wheat flour (approx. 1 ½ cups)
🥄 2 teaspoons baking powder
🥛 240 ml of milk
🥚 2 large eggs
🍦 1 teaspoon vanilla extract
🍫 90 g chocolate chips (½ cup)
🧂 ¼ teaspoon salt
Optional: maple syrup, whipped cream, or more chocolate chips to serve.
In a large bowl, mash the bananas until smooth.
Add the eggs, milk and vanilla extract. Mix well until homogeneous.
Add the flour, baking powder and salt, mixing only until integrating to prevent the pancakes from being hard.
Finally, add the chocolate chips and mix carefully to distribute them evenly. 🍫
Grease small silicone molds, ramekins or a mold suitable for the Air Fryer. This prevents the pancakes from sticking and makes them easier to remove.
Preheat the fryer to 160°C (320°F) for 3–5 minutes.
Pour the batter into the prepared pans, filling them ¾ full so the pancakes can expand without spilling.
Cook during 10–12 minutesor until golden and firm. Check with a toothpick: it should come out clean or with few crumbs attached.
Carefully remove the pancakes from the molds and place them on a plate.
Serve hot, accompanied by maple syrup, whipped cream or sprinkle more chocolate chips above. 🍌🍫✨
For extra flavor, add a pinch of cinnamon or nutmeg to the mixture.
If you want fluffier pancakes, separate the whites from the eggs, beat them until stiff and add them gently at the end.
They can be made ahead and reheated in the Air Fryer for 1-2 minutes; They maintain their texture and flavor.
Replace the milk with a vegetable drink (almond, oatmeal) for a vegan version, using an egg substitute such as flaxseed or chia.
