Ingredients
700 grams of cooked and chopped octopus
140 grams of breadcrumbs
500 grams of oil for frying
For the green mojo:
16 grams of vinegar
1 teaspoon salt
3 small garlic
150 grams of olive oil
28 sprigs of fresh coriander
For the wrinkled potatoes:
460 grams of potatoes for garnish
505 grams of water
502 grams of coarse salt
Preparation
When you have gathered all those ingredients, follow the steps that we indicate below;
We are going to start preparing the green mojo. For that, add the coriander and the peeled garlic to the glass of the robot. Program a
speed 7/3 seconds.
Then, with the help of a spatula, lower the remains of the walls and add the vinegar as well as the oil and salt. Program a
speed 10/3 minutes.
Reserve the sauce in a container and put it in the refrigerator.
