12 grams of unflavored gelatin in sheets
Juice of 3 large lemons
250 grams of icing sugar
30 grams of orange peel
500 grams of liquid cream – 35% mg
500 grams of fresh orange juice
4 egg yolks
50 grams of orange liqueur or Cointreau to taste (optional)
Preparation
To start this recipe you must place the gelatin sheets in a bowl with water to hydrate them, the water must be cold for best results. Let soak for a few minutes.
While the gelatin is hydrating, extract the lemon juice, place it in a microwave-safe container and heat for a few minutes.
Once the lemon juice is hot, extract and drain the sheets of already hydrated jellies and submerge them in the hot lemon juice to dissolve them, stir until there are no lumps or solid parts of gelatin.
On the other hand wash the oranges, and remove the skin with a fine knife without reaching the white part since this is very bitter for the preparations. Pour the orange skin into the Thermomix bowl along with the icing sugar and mix well, program.

Pour this sugar into a bowl and reserve.
Next, wash and dry the Thermomix bowl well, place the butterfly in its position, add the measure of cream you program.

You must watch the whipping so that the cream does not go over and then lose its volume and texture. It must be quite firm. Remove the cream from the Thermomix bowl and mix with the icing sugar with the help of a spatula and enveloping movements, reserve.
Remove the butterfly from the blades and pour the orange and lemon juices (containing the dissolved gelatin) together with the 4 egg yolks and the liquor of your choice into the Thermomix bowl, program.

Once this orange juice mixture is ready, pour it little by little over the bowl containing the whipped cream and, with the help of a spatula or spoon, mix gently.
Pour this mixture of thermomix orange Bavarois in a mold (or in individual molds) and refrigerate for at least a couple of hours, so that it becomes firm.
To serve, unmold and enjoy this exquisite delicacy.
