Rosca de pascua ingredients with pastry cream and angel hair with thermomix
DOUGH INGREDIENTS
- 240ml milk
- 530 grams strength flour
- 12 grams fresh yeast
- 1 egg (L)
- 80 grams of sugar (40 sugar and 40 inverted)
- pinch of salt
- 80 ml sunflower oil
- Orange zest
- Beaten egg for brushing
CREAM INGREDIENTS
- 250ml milk
- 25 grams cornstarch
- 2 yolks
- 60 grams sugar
- Vanilla
- 200 grams of angel hair

CREAM PRODUCTION
- We put all the ingredients in the glass,
- 6 minutes / 90°C / speed 4
- We separate and cover the skin with film (in contact with the cream), so as not to generate a scab. Let it cold down
DOUGH PROCESSING
- Heat the milk for a few seconds in the microwave, dilute the yeast, stir
- We place in the glass, the egg, sugars, oil
- 10 seconds / speed 4
- Now the milk with the yeast,
- 10 seconds / speed 4
- Then the zest and flour with salt,
- 10 seconds / speed 4*
- Let rest for 20 min so that the flour particles hydrate. now we knead
- 6/8 minutes / spike speed
- It is a somewhat sticky mass, but it has to be detached from the walls of the glass. If you see it necessary, knead another 2 more minutes.
- Remove to a lightly oiled bowl and cover with film. We let ferment about 2 hours or 2 hours and a half approximately.
- After the leavening time has elapsed, we proceed to degas (remove the air created after leavening), kneading for one more minute by hand.
ELABORATION FORMED
- Sprinkle flour on our work surface and on the dough. We proceed to stretch it with a roller.
- We will make a rectangle about 70 cm long by 35 cm wide approximately.
- Take the cream and spread it over the dough, being careful not to reach the edges. We will do the same with the angel hair. We are rolling like a cylinder.
- Once everything is rolled up, with the help of a knife that cuts well or a pasta cutter, we cut it lengthwise, leaving a few cm uncut at the beginning. We will have made two strips.
- Let’s cross the strips. We have prepared our oven tray lined with baking paper, we move it there and we finish joining. We cover with film and let it grow for 1 hour.
- 20 min before the end of the leavening,
- turn on the oven at 170°C / heat up and down
- Brush the bagel with the beaten egg and bake for 35/40 min.
- Remove, let cool on a wire rack and plate
