Sacher Muffins in Air Fryer
🥄 200 g wheat flour
🍬 130 g granulated sugar
🍫 50 g unsweetened cocoa powder
🥚 2 large eggs
🧈 100 g melted butter
🥛 100 ml of milk
🧂 8 g chemical yeast (baking powder)
🍑 Apricot jam (as necessary)
🍫 120 g dark chocolate
🥛 50 ml of whipping cream (heavy cream)
In a bowl, mix the dry ingredients: flour, cocoa powder, sugar and baking powder.
In another bowl, beat the eggs with the milk and melted butter.
Add the liquid mixture to the dry ingredients, stirring until you obtain a homogeneous dough without lumps.
Line muffin molds with paper cases and fill them 2/3 full.
Preheat the air fryer at 160 °C for 3 minutes.
Place the molds in the basket and cook at 160°C for about 15 minutes, or until a toothpick inserted comes out clean.
Let cool completely before handling.
Cut the top of each muffin and make a small hole in the center.
Fill with apricot jam and gently replace the lid.
Heat the cream without boiling and add the chopped dark chocolate.
Stir until you obtain a smooth and shiny cream.
Cover the muffins with the ganache and let it harden slightly before serving. 🍫
If you want a more intense flavor, use good quality pure cocoa.
You can add a touch of orange liqueur or rum to ganache for a more sophisticated finish.
