If we don’t have crème fraiche, we can make it at home.
We will only have to put 150 ml of cream with a minimum percentage of 33% fat in a bowl, add 20 grams of natural yogurt and stir. Cover and let it ferment at room temperature for about 12 hours.
Then we can use it or store it in the fridge, it has a useful life between 7 to 10 days. The more days pass, the more its properties are accentuated.
In the cake masses, they come out much more spongy
If you do not have natural yogurt, you can also replace it with a tablespoon of butter at room temperature.
