Ingredients
- 6 slices of pineapple in its juice
- 250 grams of pineapple juice
- 50 grams of white rum
- 250 grams of coconut milk
- 300 grams of mascarpone cheese
- 60 grams of sugar
- 2 tablespoons of brown sugar
- 65 grams of white rum
- 2 tablespoons of grated coconut
- 6 gelatin sheets
- 10 grams of Corn or sunflower oil
- 12 fresh mint leaves
Preparation
- To start making this delicious dessert of Italian origin, you must put the gelatin in a bowl submerged in cold water so that it hydrates.
- Choose the mold (s) you want to form the panna cotta, remember that this dessert gives a lot to the imagination. The molds can be a mold for flan, glasses, terrines or whatever you like the most.
- If they are individual molds, this recipe is enough for 6 or 8 molds.
- Lightly brush oil into each pan before pouring in the preparations if you want to unmold the panna cotta when serving.
- Then, pour the coconut milk together with the sugar into the Thermomix bowl and program.
- 3 minutes / Temperature 90 ° / Speed 1.
- After 3 minutes, pour in the hydrated gelatin and previously drained, program.
- 10 seconds / Speed 3.
- To continue, add the pineapple juice, rum and mascarpone cheese, program.
- 20 seconds / Speed 4.
- Once everything is well mixed, pour the preparation into the molds and reserve in the refrigerator for a couple of hours, until the gelatin fulfills its function and sets.
- On the other hand, in a bowl put the pineapple cut into cubes, add the rum and the tablespoons of brown sugar, also reserve in the refrigerator for a few minutes.
- To serve, carefully unmold each panna cotta and pour a generous tablespoon of pineapple marinated in rum on top, if you do not wish to unmold, in the same way, pour the marinated pineapple directly into the glass or mold where you are going to serve it.
- Finally, sprinkle with the grated coconut, decorate with some fresh mint leaves and voila, you will have an exquisite and very delicate dessert.
