Ingredients for Orange and butter muffins with thermomix
250 grams wheat flour
4 eggs (L)
150 grams sugar
60 grams melted butter
40ml sunflower oil
1 plain yogurt
Orange peel (zest), in my case candied orange in pieces, about 70 grams
60ml milk
1 envelope of chemical yeast
pinch of salt
1 tablespoon vanilla essence
Preparation of orange and butter muffins with thermomix
We put the dry ones in the glass (flour, yeast and salt), we sift them
10 seconds / speed 8
we set aside and reserve
We place the butterfly in blades, we pour the eggs with the sugar
5 minutes / speed 3.5
now we add the orange
10 seconds / speed 3.5
then the yogurt and the essence
10 seconds / speed 3.5
then the milk
6 seconds / speed 3’5
now the melted butter for the vowel,
without stopping the machine at speed 3.5
then the oil.
We stop the machine, remove the butterfly and add the reserved flour, yeast and salt,
6 seconds / speed 4
We finish mixing with the spatula.
Pour the dough into a jug and leave a minimum of 30 min in the fridge
20 min before placing the mass in the capsules,
We turn on the oven at 230°, heat up and down
We take the dough out of the fridge and fill the capsules, not completely, in the middle we put a little sugar.
We lower the temperature of our oven to 210 °, and introduce the tray, bake about 15/20 minutes / or until they are golden
