Ingredients
300 grams of cooked octopus.
200 grams of Idiazábal cheese.
1 pinch of hot paprika.
500 grams of potatoes, peeled and cut into small squares.
150 grams of whole milk.
100 grams of vegetable broth.
100 grams of butter at room temperature.
50 grams of liquid cream for cooking.
1 cup of olive oil.
Salt and pepper.
Coarse salt or maldon.
Preparation
Cook the octopus in the usual way, cut into pieces and reserve.
Pour the Idiazábal cheese chopped into pieces in the Thermomix bowl, program.
30 seconds / Speed 8.
On the other hand, wash, remove the skins and cut the potatoes into pieces, place them in the varoma container.
Then, add the milk, cream, vegetable broth, salt and pepper to the crushed Idiazábal cheese, place the varoma container with the potatoes in position and program.
25 minutes / Varoma temperature / Speed 1.
Once the cooking time is over, check the texture of the potatoes, if they are not yet fully cooked, program a few more minutes at the same temperature and speed.
Once the potatoes are ready, carefully remove the varoma container and reserve. Cover the glass of the thermomix and remove the cup, program.
1 minute / Progressive speed 5-6.
Continue adding the cooked potatoes to the cheese and cream mixture together with the butter and oil, program.
3 minutes / Varoma temperature / Speed 4.
Check the point of salt and pepper and the consistency of the cream, if you want a little smoother, program a few more minutes at the same speed.
Finally, pour the Idiazábal cream cheese into the dish where it will be served, place pieces of octopus on top and pour oil, a pinch of paprika and coarse salt over these.
