Ingredients
400 grams of cooked octopus cut into slices
For the potato emulsion with octopus:
1,500 grams of water
2 bay leaves
Salt to taste
500 grams of potatoes to cook peeled and in pieces
200 grams of whipping cream
30 grams of extra virgin olive oil
ground pepper to taste
For the paprika oil:
80 grams of extra virgin olive oil
1 tablespoon sweet paprika
½ tablespoon hot paprika (optional)
Salt to taste
Preparation
To begin the preparation of this tempting recipe, you must have the cooking of the octopus ready, you can do it the way you prefer, in water or on the grill, either way it will be great.
Once the octopus is cooked, cut it into thin slices and reserve until the dish is assembled.
After that, place the water together with the bay leaves in the Thermomix bowl to boil, program.
12 minutes / Temperature 100° / Speed 1.
While the boiling time of the water elapses, wash, remove the skins and cut the potatoes into small pieces, reserve until the end of the thermomix time.
Once the 12 minutes of boiling water have passed, add a little salt to it, pour the pieces of potatoes into the basket and place it in its position inside the Thermomix bowl, being very careful not to burn yourself with the steam and the water, program.
20 minutes / Varoma temperature / Speed 1.
When the potatoes are ready, carefully remove the basket with the help of the spatula, and discard the water.
Now, pour the cooked potatoes into the Thermomix bowl together with the whipping cream, a little oil, salt and pepper, program.
3 minutes / Temperature 70° / Speed 4.
Ready the emulsion, empty the contents of the glass of the thermomix preferably in a pastry bag, to facilitate the filling of the cups or bowls where the octopus and potato foam with thermomix is going to be presented.
Before continuing, wash and dry the Thermomix bowl very well.
Pour a little olive oil into the glass of the thermomix to heat, program.

Then, to the hot oil add the tablespoon of sweet paprika, and if you prefer the ½ tablespoon of hot paprika, program.
