Preparation of Mantecados Murcianos with Thermomix

1. The first thing we will do is soften the lard, for which we will put the lard in our thermomix
2. 20 seconds / speed 3
3. Add the sugar, the egg yolks, the sugar, the lemon zest and the cinnamon and beat everything
4. 30 seconds / speed 4
5. Finally we are going to incorporate the flour little by little through the mouth while we knead
6. 30 seconds / speed 2
7. Once all the flour is incorporated, leave it for a few more seconds.
8. Preheat the oven to 180º C
9. We take out the dough and take small portions and smooth the dough leaving it with a thickness of about 2 centimeters and with a dough cutter with the shape we want (if we want to follow the Murcian tradition we will put fun shapes of stars or crescents etc..), if we don’t have we can always make it circulate
10. we put our tray with the pasta dough 20 minutes at 180ºC
11. When removing the pasta, sprinkle sugar and cinnamon on top and let cool afterwards.
