520 grams of bread flour
430 grams of water
1 teaspoon salt
15 grams of fresh pressed yeast
1 teaspoon baking soda
11 grams of honey
2 tablespoons poppy seeds
2 tablespoons sesame seeds
Sunflower oil
Semolina
Preparation
When you have gathered all these ingredients, follow the steps that we indicate:
Add the yeast, 350 grams of water and honey to the robot’s glass. Program a
speed 2 / 37º / 2 minutes.
Then, add about 165 grams of the flour and program at
speed 4/30 seconds.
Let it sit for around half an hour.
After that time, add the rest of the flour, except for 10 grams, and the salt. Put the robot to work
spike speed / 1 minute.
In a bowl, greased with oil, pour the dough out of the glass, paint it with oil and cover it with plastic wrap to double its volume. Leave it like this for an hour.
After time, take the dough and divide it into four parts. Give these oval shapes and place them on a baking sheet, which has parchment paper on it and on which you have sprinkled semolina.
Cover the tray with a kitchen towel for half an hour.
In a bowl, add 80 grams of water and 10 grams of flour as well as the baking soda. Mix everything well.
The breads that you have paint them with that mixture of water, flour and baking soda. Then sprinkle them with the two kinds of seeds.
Then, put the tray in the oven, previously preheated, and keep it there for about 25 minutes at 200º.
