Ingredients of integral mold bread with thermomix
For the sourdough:
20 grams of fresh yeast
130 grams of strong flour
100 grams of water
5 grams of sugar
For the bread dough:
sourdough
190 grams of wholemeal flour
30 grams of wheat bran
100 grams of strong flour
150 grams of milk
50 grams of lard
10 grams of sesame seeds
10 grams of salt
Preparation of integral mold bread with thermomix
For the sourdough
we put in our Thermomix bowl the water, the flour, with the yeast and the sugar and mix the ingredients

leave the dough in the glass breathing for 45 minutes, until it doubles its size
For the bread dough
Once the mother dough has doubled in size, we add the wholemeal flour, the force flour, the milk, the pork butter, the bran and the salt and mix and knead
15 seconds / speed 6
right after we knead
2 minutes / spike speed
On top of the table on which we are going to work, we put some sesame seeds and put our dough on top in a cylindrical shape so that it catches the seeds.
With an elongated mold (which will be the one in the shape of a loaf of bread) we grease it with a little oil, put the dough inside (it is important that the dough fills the corners)
and let the dough rest again in the mold until it doubles its size again, in a dry place without drafts
Preheat the oven to 200ºC
Once the dough has doubled in size, we put it in the oven.

To store and preserve it, we put it in plastic wrap and store it in a dry and not too hot place.
