BASE INGREDIENTS
150 grams cookies (the ones you have)
60 grams butter (melted)
FILLING INGREDIENTS
6 eggs
130 grams icing sugar
400 grams ricotta
Lemon zest
CARAMEL GLAZING INGREDIENTS
135 grams sugar
225 ml cream (to mount)
18 grams honey (optional)
2 sheets neutral gelatin

BASE ELABORATION
Cookies to the glass, 10 seconds / speed 6, put aside in a bowl.
Melt the butter and join it to the biscuits. Go stirring.
We line the mold, base and walls with baking paper, turn the cookies over and distribute them in the bottom, we will press with the back of a glass or similar. We take to the fridge while we continue with the recipe
PREPARATION STUFFED
Eggs and sugar in the glass,
40 seconds / speed 4
then the cheese and zest,
10 seconds / speed 5

Oven previously preheated to 200° C / heat up and down
We bake about 40/45 minutes / after checking the toothpick, it comes out clean.
Turn off, remove and let cool.
Then we take it to the fridge for about 2 hours to finish solidifying.
GLAZE MAKING
Make the caramel with the sugar in a saucepan over moderate heat. When it is ready, turn it off, remove it and add the very hot cream without stopping to stir. Add the drained gelatin (previously hydrated in cold water), stir and pour it into a jar.
Take the cake out of the fridge and pour the frosting on it.
We take it back to the fridge for about 2 hours to set the surface.
Then, we unmold, plate and finish decorating to taste
