Ingredients

  • 150 grams of dessert chocolate
  • 75 grams of condensed milk
  • 25 grams of pure cocoa
  • 375 ml milk
  • 300 ml of cream
  • 45 grams of sugar
  • 60 ml of water
  • 15 grams of gelatin

Instructions

  1. The first thing we are going to do is hydrate the gelatin for which we put the gelatin with water and stir and reserve
  2. We put the dessert chocolate among other small ones inside our Thermomix that we proceed to chop for it we program
  3. 10 seconds / speed 8
  4. We take out in a bowl and reserve
  5. In another bowl we put the cocoa powder and put a few tablespoons of hot water and stir until the cocoa is completely dissolved and reserve
  6. We put the milk in our Thermomix glass, together with the cream, sugar and condensed milk and heat without boiling
  7. 3 minutes / 90º C / speed 3
  8. As soon as it is hot, we add the cocoa that we had reserved in a bowl and program again
  9. 5 seconds / speed 4
  10. We immediately add the chopped chocolate that we had reserved and we program again
  11. 4 minutes / 90ºC / speed 3
  12. Add the gelatin and stir
  13. 20 seconds / speed 2
  14. We pass all the chocolate mixture through a strainer to remove small undissolved remains and put it in a bowl
  15. We place a large casserole with water and ice and put the bowl with the chocolate mixture inside to cool without stopping to stir the mixture, for about 5 minutes until it tempers
  16. We put the tempered chocolate in our mold, if we have a mold that can stick to us we cover it with greaseproof paper, if it is a silicone mold that does not stick it is not necessary
  17. then we put it to cool for at least 8 hours in the refrigerator
  18. We unmold and with a strainer we sprinkle cocoa powder on top, covering it perfectly and our chocolate mousse cake will be ready
