Ingredients of Eggplant chips with thermomix
1 aubergine cut into thin slices
A couple of tablespoons of mayonnaise
5 tablespoons of wheat semolina
90 g of Parmesan cheese
1 clove garlic
Salt
Preparation of Eggplant Chips with thermomix
We are going to cut the aubergine into thin slices, before we wash it by passing it through the tap and drain well. Once drained we add salt to taste and reserve
Put the cheese, semolina and garlic cloves in the thermomix and blend
15 seconds / speed 8
we put the mixture in a deep dish and then bread the aubergines and reserve, and put the mayonnaise in another bowl
Preheat the oven to 200ºC
We put a baking tray lined with parchment paper greased with olive oil
We pass the eggplant slices through mayonnaise and through the mixture of semolina and cheese that we had reserved and place in our baking tray until it is full
Bake for 15 minutes, after 7 minutes we will turn our eggplants
