- 220 grams of brown sugar
- 300 grams of oat flakes
- 2 teaspoons vanilla or liquid vanilla paste
- ½ on Royal yeast
- 2 pinches of salt
- 2 eggs size L
- 50 grams of maple syrup or honey
- 150 grams of soft olive oil
Instructions
- We start by preheating the oven to 220°C.
- Start by mixing the dry ingredients inside the thermomix glass, wholemeal flour, yeast, oat flakes, plus brown sugar and salt, program. 5 seconds / Speed 6.
- Then, add the liquid ingredients, eggs, maple syrup or honey, vanilla, program. 10 seconds / Speed 6.
- Then program again. 2 minutes / Spike speed.
- Once ready the dough of the biscuits digestive you will notice that it is a little sticky, by the effect of maple syrup or honey, so stretching on a work table is not a good option.
- In this case take portions by hand or with a teaspoon so that they are the same size and form balls.
- Place the dough balls on a lightly greased and floured baking sheet, with a prudent distance between each ball as the yeast tends to expand during baking.
- Once the balls are formed, with the help of the back of a glass (can be the thermomix lid cup) lightly crush each ball before baking.
- Bake at 200°C for 10 or 12 minutes, the time will depend on the intensity of your oven and how crisp you want the cookies. At the end of the baking time, remove them from the oven, let them cool and enjoy.
