Ingredients
- 500 grams of water
- 250 grams of sugar
- 4 – 6 strips of lemon peel (only the yellow part)
- 1 stick of cinnamon
- 1 vanilla bean (split in half and scraped)
- 350 grams of peeled whole raw chestnuts
Preparation
- The first thing we will do is peel our chestnuts well, removing the shell and the final skin that sometimes remains stuck.
- We put the water, vanilla, cinnamon, sugar, lemon peel in our Thermomix bowl and program
- 10 minutes / 100 ° C / reverse spin / speed 1
- We add the chestnuts and program
- 12 minutes / 100 ° C / reverse spin / scoop speed
- We put the thermomix basket on top of a bowl and drain the content of our Thermomix bowl in it as a strainer
- remove the lemon peel, the cinnamon stick and vanilla bean
- We put the chestnuts in 3 jars of 250 ml that are sterilized, and we leave 3 cm of the free edge.
- Pour in the reserved hot syrup and cover them completely, leaving 1 cm free from the edge.
- We close the jars, wrap them in thin gauze and put them in a pressure cooker.
- Cover with plenty of water and cook for 25 minutes after it has reached pressure.
- Let the pot cool completely for at least 1 hour
- and our chestnuts will be ready
