Ingredients of Cabrales Cheese Croquettes with Thermomix
100 grams of Cabrales cheese
100 grams of flour
100 grams of butter
800 grams of milk
50 grams shallot
1/2 teaspoon salt
1 pinch of freshly ground black pepper
Preparation of Cabrales Cheese Croquettes with Thermomix
We introduce the Cabrales cheese or another blue cheese (we recommend Cabrales) in our Thermomix bowl and blend for 5 seconds speed 5. Put in a bowl and reserve
We now put the shallot in our glass and grind for 2 seconds at speed 5, now we also add the butter and we put another 2 seconds at speed 5
Sauté the shallot and butter for 3 minutes 120º speed 1
Add the flour to the shallot and fry for 4 minutes 120º speed 1
We are now going to incorporate the nutmeg, salt, pepper and milk and mix. 10 seconds speed 6
Add 2 generous tablespoons of the Cabrales cheese and program 8 minutes 120º speed 4
Once this step is reached, we let it rest for 5 minutes… we deserve this rest just like the dish… ?
Add the rest of the Cabrales cheese and mix with the spatula
Our bechamel is already done. Now we put it on a tray and put transparent film on top and let it cool for 12 to 16 hours.
