Banoffee Cake with thermomix
Ingredients
- 150 grams of common flour
- 3 egg yolks
- 50 grams powdered sugar
- 1 pinch of salt
- 75 grams of butter
- ½ teaspoon vanilla extract
- Candy filling
- 200 grams white chocolate, in small pieces
- 1 can (395 grams ) of condensed milk
- 125 grams of butter
- 160 grams brown sugar
- 125 grams of golden syrub (it is a mixture of water sugar and lemon juice in its home version, they sell it done)
- ½ teaspoon of sea salt flakes
To decorate
- 3 bananas
- 300 grams of heavy cream
- 100 grams of dark chocolate, in small shavings with a vegetable peeler
Instructions
- Preheat the oven to 180°C
- Put in our thermomix glass the flour, the egg yolks, the sugar, butter, vanilla extract and salt to taste and mix for 20 seconds / speed 6
- Wrap the dough in film and let it cool down, reserving it for 30 minutes.
- Once cooled, we place it on a floured surface.
- We prepare a cake dish of about 22 cm. and we put the dough, pricking it with a fork and place a sheet of grease-resistant paper on top.
- Bake for 15 minutes.
- Remove and let cool.
- Elaboration of the caramel:
- To make the fudgey, place the white chocolate in our thermomix glass and program 5 seconds / speed 9 Pour into a separate container until later.
- Pour the condensed milk, the butter, the brown sugar and the golden syrub into the thermomix glass. We program 20 minutes / varoma / speed 3
- Add the chopped white chocolate and mix for 20 seconds / speed 4
- Pour over the cold dough and let it rest at room temperature for at least 4 hours.
- Insert the butterfly in the thermomix and insert the cream and put 45 seconds / speed 3
- Until mounted decorate
- Chop the bananas into slices and decorate with the cold caramel.
