1000 grams of tripe cooked naturally.
1 pig trotter (optional)
2 cloves of garlic
1 onion cut into quarters.
50 grams of olive oil.
1 tablespoon of paprika.
50 grams of white wine.
1 dried bay leaf.
1 or 2 dried cayenne peppers.
100 grams of cured bacon or pancetta cut into cubes.
1 Asturian chorizo in thick slices.
1 black pudding from Burgos (optional)
Preparation
To start (if you do not have the cooked tripe, proceed to cook them previously) pour the 1000 grams of cooked tripe naturally into the Thermomix bowl together with the pig’s trotter, program.
Once the pig’s trotter is cooked, use the basket to drain the liquid. Without discarding the cooking water, reserve in separate containers (on the one hand the tripe and the pig’s trotter and on the other the cooking water).
Again, in the glass of the thermomix add the onion cut into pieces and the garlic cloves, program.
