Salmon croquettes in air frying – Air Fryer
1 kg of potato puree 🥔
300 g of hot smoked salmon, without skin and crumbled 🐟
½ cup of corn cream 🌽
1 tablespoon of chopped fresh dill 🌿
100 g of Alioli (more extra to serve)
1 egg, slightly beaten 🥚
2 tablespoons of milk 🥛
150 g (½ cup) of wheat flour
50 g (2 cups) PANKO bread 🍞
Lemon segments, to serve 🍋
Mix the base: In a large bowl, combines potato puree, salmon, corn cream, dill and 100 g of alioli. Oval croquettes and place them on a tray with baking paper. Refrigerate 30 minutes to take firmness.
Empana the croquettes: On a plate place the flour, in another mix the egg with the milk and in a third put the Panko. Each croquette passes by flour, then by egg and finally through Panko, pressing to adhere well.
Cooking in the fryer: Spray the spray oil croquettes and place them in the fryer basket. Cook at 180 ° C for 10 minutes, until they are crispy and golden.
