BASE INGREDIENTS
sablé or broken dough
200 grams wheat flour
7 grams chemical yeast
3 egg yolks (M)
50 grams of sugar
pinch of salt
150 grams butter (cold)
Lemon zest
FILLING INGREDIENTS
2 large or 3 small apples
Juice of half a lemon
40 grams of sugar
5 grams vanilla sugar
5 grams cornstarch
3 natural unsweetened Greek yogurts
35 grams of cornstarch
MERINGUE
3 egg whites (M)
pinch of salt
Half teaspoon lemon juice
80 grams of sugar

DOUGH PROCESSING
Sift the flour and yeast
20 seconds / speed 8
set aside and reserve
We put in the glass, the sugar, yolks, butter to cubes; Pinch of salt, zest, flour and yeast,

We form a roll with the dough, remove 1/3 of the dough, wrap it in film and leave it in the freezer, with the other part, with the mold previously placed on its base with baking paper and on the walls we spray with release spray ( If we don’t have, we brush with oil), we place the dough and we cover the base and walls. We put it in the freezer while we continue with the recipe.
PREPARATION STUFFED
Wash and core the apples, cut them into cubes, put them in a frying pan, with the sugar, lemon juice and cornstarch.
We cooked about 25/30 min over medium heat.
We turn on the oven at 180°C / heat up and down
We remove the mold from the freezer and pour the apples.
With the extremely clean and dry glass, we put the butterfly in blades, introduce the whites, Pizquina of salt and lemon,

Once the time is up, we are adding the sugar little by little, without stopping beating at speed 3.5, another 3 min.
Pour into a bowl and reserve
Place the yogurt, vanilla sugar and cornstarch,

we dumped it into a bowl.
We are mixing the meringue to the yogurt cream, little by little and with enveloping movements.
When we have everything well mixed, we pour it over the apples.
We take out the piece of dough that we have in the freezer, and grate it on top.
Bake for about 40 minutes / take it out and let it cool completely and then take it to the fridge for about 2 hours, so that its interior finishes curdling.
After the time, we unmold and finish decorating with icing sugar
