One of the fishes I like the most, the monkfish, in any way, I usually take it very often grilled without further complications. This recipe has clams
This time we are going to prepare it like no other, with one of the most international wines that we have from Galicia and that accompanies of wonder to any fish the albariño, a delight served well cold, and that today we are going to cook it jointly with our monkfish.

Ingredients
- 500 grams of monkfish, clean
- 250 grams fish broth (I buy it done and recommend aneto)
- 100 grams Albariño
- 2 cloves of garlic
- 100 grams onions
- 50 grams olive oil
- 8 clams
- 8 potatoes, small, peeled
- 1 teaspoon cornstarch
- 1/2 cup of water
- Salt
Instructions
- The first thing we will do is put in our thermomix glass the oil with the onion and garlic and crush everything 5 seconds / speed 5
- Once crushed, we fry the onion and garlic for which we program 12 minutes / temperature varoma / speed 1. We now add to the garlic and onion the wine, our albariño, leaving the cup unplaced so that the excess alcohol evaporates and we program 2 minutes / temperature varoma / speed 1.
- Add the fish stock, 250 grams, and place the potatoes in the basket and put it in the glass and the monkfish and clams in the glass, add salt to taste and set 18 minutes / temperature Varoma / speed 1
- At the end of the programmed time, we remove the varoma and the basket and we incorporate the cornstarch, diluted in a bucket of water, programming again 2 minutes / temperature Varoma / speed 1
- We put the monkfish, clams and potatoes in a dish before putting our sauce on top covering everything,
- We are going to crush it one last time, now that it will have lowered its temperature a little bit and we program 40 seconds, progressive speed 4-10
- We pour the sauce over the monkfish, potatoes and clams and our dish is ready to serve
