For the cake
120 grams pastry flour
120 grams sugar
20 grams vanilla sugar
4 eggs
½ teaspoon of salt
*If you do not prepare a sponge cake, use sponge cakes with ladyfingers
For the green tea infusion
10 grams green tea
150 grams water
20 grams brown sugar
For the filling
350 grams of mascarpone cheese
The zest of the skin of 1 lemon
40 grams honey
½ teaspoon cinnamon
30 grams shelled pistachios
Preparation of Tiramisu with green tea for Thermomix
Preheat the oven to 180°C before starting the preparation of this wonderful dessert.
For the cake mixture, place the butterfly on the blades of the Thermomix bowl, pour the eggs inside together with the sugar and the vanilla sugar and program.
6 minutes / Temperature 37° / Speed 4.
Once again program but this time without temperature.

Through the opening of the Thermomix bowl lid, add the flour together with the salt, pouring it around the butterfly, little by little, cover and program.

Remove the butterfly and with the spatula finish wrapping the mixture gently.
Pour the cake mixture into a baking tray (30 x 40cm) lined with non-stick paper, baking paper or silicone sheet, bake for 10 minutes.
Once the 10 minutes of baking are completed, remove the cake from the oven, unmold while hot, carefully removing the baking paper. Let the cake cool completely.
Back in the glass of the thermomix, clean and dry, add 150 grams of water and the brown sugar, program.
5 minutes / Temperature 100° / Speed 1.
When the water is hot, add the green tea and steep 5 minutes / covered.
After a few minutes, transfer the green tea infusion to a container and let cool completely, strain and reserve.
Meanwhile, cut the cake into discs of about 5 centimeters, (or the size of the glass you are going to use to serve it).
Once again in the glass of the thermomix, clean and dry, mix the mascarpone cheese or cream cheese together with the honey, cinnamon and lemon zest and program

Moisten or lightly soak the sponge cake or sponge cakes with the green tea infusion.
Use glasses or wide glasses to assemble the Tiramisu, then place a layer of sponge cake on the bottom. Cover with a layer of cream cheese, and continue until the ingredients are finished, decorating with peeled and chopped green pistachios on the top of the glass. Serve very cold.
