Ingredients
500 grams of mascarpone
365 grams of condensed milk
210 grams of blueberries
25 grams of sugar
100 grams of lemon juice
210 grams of cookies
80 grams of butter
Preparation
When you have gathered all those ingredients, follow the steps below:
Add the blueberries, 30 grams of lemon juice and sugar to the robot’s glass. Program a
spoon speed / 80º / 5 minutes.
Pour the contents of the glass into a bowl and let it rest.
Clean the aforementioned glass and add the butter. Program a
speed 2 / 50º / 2 minutes.
Then add the cookies and put the robot to work
speed 8/10 seconds.
Take a removable mold for the cheesecake and put plastic wrap on it. When you have it ready, pour the contents of the glass into it evenly. Put the mold in the refrigerator.
Place the butterfly on the robot. In the Thermomix bowl, which you should have cleaned again, you must now add the condensed milk, the mascarpone and the rest of the lemon juice. Program a
speed 3/20 seconds.
Take the mold out of the refrigerator and add half the content of the glass to the cookie base. Then, strain the cranberry sauce and add only the cranberries previously strained. Then, pour the other half of the contents of the glass and put the cheesecake back in the refrigerator. You must stay in it between 2 and 3 hours.
When you are going to serve it, you will have to top it with the cranberry sauce that was left after placing those fruits.
