Today we bring another recipe from our friend Luz Maria Lagoa Vives. Hello friends, today I leave you the recipe for a cake that I made a long time ago, so that you have it for any celebration (in my case, it was for the birthday of one of my sisters-in-law; she will be 2 years old.

Ingredients for chocolate cake and strawberry mousse with thermomix
CAKES
- 70 grams semi-bitter couverture chocolate
- 150 ml coffee (fresh)
- Buttermilk (160 ml milk + 20 ml lemon juice)
- 100 ml of oil
- 2 whole eggs plus 1 white
- Vanilla
- 200 grams of sugar
- 250 grams of flour
- 90 grams of pure cocoa powder
- 5 grams of chemical yeast
- 7 grams of baking soda
- pinch of salt
STRAWBERRY JAM
- 500 grams of strawberries
- 100 grams of sugar
- Juice of half a lemon
STRAWBERRY MOUSSE
- 1 tub of cream cheese (approximately 300 gr)
- 600 ml of whipping cream
- 50 grams of icing sugar
- 3 tablespoons of milk
- The jam made earlier
SYRUP
- 100 ml of water
- 50 grams of sugar
- A splash of liquor (optional), or vanilla essence (I have added rum)
Preparation of chocolate cake and strawberry mousse with thermomix
JAM
- Wash the strawberries very well, place them inside the glass, along with the sugar and lemon juice. Remove the beaker and place the basket, program
- 30 minutes / varoma temperature / speed 1
- Remove to a bowl, when cool, to the fridge.
- MOUSSE
- We put the butterfly in blades, we introduce the cream cheese, we program
- 3 minutes / speed 4
- we introduce the tablespoons of milk through the mouth,
- 2 minutes / speed 4
- we introduce the jam and program
- 2 minutes / speed 4
- Remove and reserve in a bowl.
- We wash the glass well, introduce the cold cream and icing sugar, program
- (without time), speed 3 and a half
- (pay attention to change of noise, because it mounts immediately)
- When it is assembled, add little by little and with enveloping movements to the bowl that we had reserved for the cream cheese and jam.
SYRUP
- Pour all the ingredients into the glass and program
- 7 minutes / 90ºC / speed 2
CAKES
- First we make the buttermilk (cut milk). We introduce the lemon juice into the milk, stir and reserve.
- Introduce in the glass, the flour, cocoa, sugar, yeast, bicarbonate and salt and sift them,
- 10 seconds / speed 8
- Withdraw and reserve.
- Make the coffee and pour it hot over the broken chocolate, stir until the chocolate is completely dissolved.
- We introduce in the glass, the mixture of coffee and chocolate, then the oil, the whole eggs and the white, the sour milk and vanilla essence, mix
- 30 seconds / speed 4
- Add the dry ingredients, mix 30 seconds / speed 4.
- Preheated oven 180° C / heat up and down
- Grease the molds and fill with the dough,
- bake 25 minutes / or until the toothpick is checked, it comes out clean
- Let cool on rack.
- FOR THE FINAL DECORATION I needed 500 ml of whipping cream, 80 grams of icing sugar, 3 tablespoons of cream cheese and 6 strawberries
CAKE ASSEMBLY
- layer of sponge cake, we get drunk, layer of mousse, and so on until finishing with the third layer of sponge cake. Cover the surface and sides with a thin layer (crumb picker), place in the fridge for 30 min. After the time, cover generously with the mousse, surface and sides.
- Smooth with a spatula. Decorate to taste
