Ingredients of Sole with orange with thermomix
1 whole sole of approximately 400–500 grams(without skin and cut into fillets)
100 grams of sherry wine
20 grams of water
½fish bouillon cube
Juice of 2 oranges
2 oranges(1 cut into slices and another to extract the pulp)
50 grams of butter
2 eggs(separate the whites and yolks)
1 small onion
Salt and white pepper to taste
Herb mix(parsley,tarragon,chervil,chives)
Preparation of sole with orange with thermomix
Wash and dry the fillets of sole with absorbent paper and place them in the varoma container(grease the container a little so that the sole does not stick during the cooking process).Add salt,pepper,the mix of herbs to taste and on each fillet a slice of orange.
On the other hand,grease two individual flan molds,sprinkle with salt,pepper and herb mix and place an egg white in each mold,wrap them with plastic wrap and also place them in the varoma container.
In the Thermomix bowl,add the sherry,water,half a cube of fish stock,a part of the measure of butter,the pulp of an orange(without the white skin),a little more salt and pepper,place the varoma container with the sole and the flan moulds,program.

Remove the sole and the varoma container,being careful not to burn yourself,and reserve
Then,we add the egg yolks,the rest of the butter and the orange juice to the Thermomix bowl,to mix the rest of the ingredients and create a homogeneous sauce,program.

Place the fillets of sole in a dish and cover them with the orange sauce.Unmold the cooked egg whites and place each on top of each fillet.
