- 500 grams of prawns, peeled and headless
- 2 ripe mangoes, peeled and diced
- 1 red onion, finely chopped
- 1 red bell pepper, finely chopped
- 1 yellow bell pepper, finely chopped
- 1 jalapeño, seeded and finely chopped
- 1 bunch of fresh coriander, chopped
- The juice of 5 lemons
- The juice of 2 limes
- Salt and pepper to taste
- 1 tablespoon olive oil
- Green plantain chips to accompany (optional)
Preparation of shrimp and mango ceviche with thermomix
- Prepare the prawns: In the Thermomix glass, place the peeled and headless prawns. Program the Thermomix at 100°C for 2 minutes. This will help kill any bacteria present on the prawns.
- Marinate the prawns: Remove the prawns from the glass and transfer them to a container. Add the lemon and lime juice to the prawns and marinate for 30 minutes in the refrigerator. The citric acid in the lemon and lime juice will lightly cook the prawns, leaving them tender and flavorful.
- Prepare the mix of ingredients: In the clean glass of the Thermomix, add the red onion, the red and yellow peppers, the jalapeño and the fresh cilantro. Chop the ingredients at speed 4 for 10 seconds until you get a finely chopped mixture.
- Combine all the ingredients: In the container where the marinated prawns are, add the mixture of chopped ingredients from the Thermomix. Also add the mango cubes and mix gently to combine all the flavors.
- Season and refrigerate: Season the mixture with salt, pepper and a tablespoon of olive oil. Stir gently to ensure all ingredients are well coated. Then, cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to blend and chill.
- serve the ceviche: When serving, remove the shrimp and mango ceviche from the refrigerator and mix gently to ensure that the flavors are well distributed. You can serve the ceviche in individual glasses or in a deep dish, accompanied by green plantain chips if you want to add a bit of crunch.
