Ingredients of Rice pudding cake with Thermomix
200 grams cinnamon cookies
200 grams round rice
1.5 liters of whole milk
200 grams cold butter
1-2 cinnamon sticks
the skin of a lemon (only the yellow)
200 grams sugar
200 grams whipping or cooking cream
50 grams butter
a dash of anise
2 sachets of curd
cinnamon powder
Preparation of rice pudding cake with Thermomix
We put the cinnamon cookies in our Thermomix bowl (if we don’t have we can do it with Maria cookies and we put ground cinnamon)
and we grind the cookies
5 seconds / progressive speed 8-10
Add 100 grams of cold butter and stir well
15 seconds / speed 6
We take a removable cake mold of about 24 – 26 cm we line it well, we put the base cookie dough smoothing it well and strong and we put it in the refrigerator
Without washing our Thermomix bowl, we put the milk, the rice, the cinnamon sticks and the lemon peel inside and program
45 minutes / 90ºC / speed 1 / left turn.
At the end we remove the lemon skin and cinnamon sticks
Add the sugar, the cream and 50 grams of butter, the splash of anise and the curd sachets and mix everything

at the end of mixing we program
10 minutes / 90ºC / speed 2
Carefully pour the contents of our Thermomix bowl over the cookies that we had stored in the refrigerator and cover it with plastic wrap
Let it cool to room temperature and then put it back in the refrigerator for at least 6 hours.
Before eating, sprinkle with ground cinnamon generously on top
