240 grams of sunflower oil
5 grams of Royal type yeast
240 grams of pastry flour
250 grams of sugar

2 tablespoons lemon juice
1 teaspoon apple cider vinegar
1 teaspoon baking soda
2 teaspoons vanilla extract
30 grams of pure cocoa powder
1 or 2 teaspoons red food coloring, Christmas Red

350 grams of icing sugar
120 grams of butter at room temperature
400 grams of Philadelphia cream cheese
1 teaspoon liquid vanilla extract
Preparation
We start with the sponge cake, in a container or bowl pour the milk together with the lemon juice, mix lightly with a spoon and let it rest, from this mixture a buttermilk or curdled milk will result.
Then, in the glass of the thermomix add the sifted flour, the cocoa powder, the salt, the yeast and the bicarbonate, program.
10 seconds / Speed 6.
Reserve the previous mixture in a bowl and continue.
Back in the glass of the thermomix add the eggs together with the sugar, program.
3 minutes / Temperature 37° / Speed 3 ½.
When finished, program another 3 minutes without temperature and at the same speed.
Continue adding the oil, vinegar, vanilla, coloring and buttermilk that you have reserved, program.
10 seconds / speed 4.
Once everything is well mixed, pour the dry ingredients that you had previously mixed with the flour, program.
5 seconds / Speed 5.
Remove the Thermomix bowl from the base and with a spatula finish mixing everything with gentle movements.
Divide the mixture into 2 equal parts and pour it into two molds of equal size (approximately 18-20 cm) to make a filled tart.
In a preheated oven at 160°C, bake for 30 – 40 minutes or when you check that the cake is ready.
Remove from oven and let cool.
To make the coverage, pour the butter to whiten it into the Thermomix bowl, program.
3 minutes / Speed 3.
Add the icing sugar, program.
1 minute / Speed 10.
Finally add the cheese and vanilla, program.
30 seconds / Speed 3.
Remove the glass from the base, finish mixing with the spatula and with gentle movements.
To assemble the cake, place the first layer on a cake base, add a part of the cream cheese, spread well, place the other part and cover the entire cake with the rest of the cream cheese, decorate as you like.
