This exquisite preparation can be eaten alone for dinner, or it can be the ideal garnish for a fish, some stew or simply a fried chicken.
Potatoes with aioli with Thermomix
Ingredients
- 500 grams of potatoes cut into medium pieces
- 500 ml of water
- 250 ml of sunflower oil
- 6 cloves of garlic
- 150 ml of virgin olive oil
- Salt to taste
- The juice of a lemon
- Fresh chopped parsley
Instructions
- Be careful because we must divide the ingredients to make on one side the aioli and on the other the cooking of the potatoes. Start cooking the potatoes. Place 100 ml of olive oil and two cloves of garlic in the Thermomix glass. Grind 3 seconds / speed 10.
- Then fry the garlic a little bit, program it. 3 minutes / speed 1/ Varoma temperature.
- Then add 250 ml of water, the potatoes cut into medium pieces and salt to taste. Program it again. 20 minutes /turn left/ spoon speed/ Varoma temperature.
- Once the potatoes are cooked, let them drain, rest and set aside.
- The preparation of the aioli in thermomix should be a little careful, since the mixture consists of emulsifying the oil with the rest of the ingredients, this will give the desired and perfect creaminess.
- In the thermomix glass, previously washed and dried, add the 4 remaining garlic cloves, 50 ml of olive oil, the juice of one lemon, salt to taste and program. 3 minutes / speed 5.
- In the next step you must place the butterfly to mix (emulsify) the oil.
- Remove the cover of the Thermomix glass, so that it incorporates the 250 ml of sunflower oil in a constant manner, program it. 3 minutes / speed 5.
- It is important to add the oil at a constant rate (neither too fast nor too slow) as this is the point that will make a perfect aioli.
- The estimated time is the time it will take to incorporate the entire measure of oil, if you must add or stop the Thermomix do not hesitate to do so.
- Once the preparation of the aioli is ready, proceed to mix it with the potatoes with circular movements.
