Orange cheesecake ingredients with thermomix
150 grams of orange juice
1 teaspoon grated orange peel
6 strips of orange peel
20 grams of orange liqueur (optional)
500 grams of Philadelphia type cheese
250 grams of cream (35% fat)
300 grams of condensed milk
1 egg
3 grams of neutral flavor gelatin or alternatively 1 ½ sheets of gelatin
6 square pasiegos sobaos, approximately 8 cm each
40 grams of lemon juice
150 grams of sugar
40 grams of butter
½ teaspoon of salt
Preparation of orange cheesecake with thermomix
To start this wonderful preparation, you must hydrate the gelatin, either in sheet or powder, (if it is powder you should only use ½ cup of water). To do this, place the sheet of gelatin submerged in cold water. Let hydrate for a few minutes.
Then, line the base of a removable rectangular mold of approximately 30x20x6 cm with baking paper.
Then, cut the sobaos pasiegos in half, lengthwise, to obtain two units with half the initial thickness, cover the bottom of the mold with them.
Subsequently, place the butterfly on the blades and pour the very cold cream into the Thermomix bowl, program.

You must watch the whipping until the cream is whipped and creamy.
Remove the butterfly from the blades, pour the whipped cream into a bowl and reserve in the fridge.
Back in the glass of the thermomix, clean and dry, add half the measure of orange juice, along with half the measure of sugar, as well as half the measure of lemon juice, program. 4 minutes / Speed 100° / Speed 2.
Pour this mixture of juices into a bowl, if it is your choice add the orange liqueur, let stand a few minutes to lower the temperature.
With this syrup moisten the sobaos that you have arranged at the bottom of the tray.
Back in the Thermomix bowl, place the butterfly on the blades, pour the Philadelphia-type cream cheese together with the condensed milk, with the rest of the lemon juice and the grated orange peel, program.

Subsequently, place the hydrated and drained gelatin sheet in a bowl (if it is powdered gelatin, it absorbs all the water and remains as a light paste) add 20 grams of orange juice. Reserve the half sheet of gelatin for the end of the preparation.
Put the bowl in the microwave for 5-10 seconds and mix until the gelatin dissolves completely. Add it to the glass of the thermomix and program.

To continue, add the whipped cream to the gelatin mixture and program.
15 seconds / Speed 3.
Finish mixing with the spatula. Pour over the base of sobaos and smooth the surface.
Reserve in the refrigerator.
Again in the glass of the thermomix, clean and dry, add the rest of the sugar and the orange peel and program.
10 seconds / Speed 10.
Immediately add the butter, salt, egg and the rest of the orange juice and program.
8 minutes / Temperature 90° / Speed 2.
Incorporate the remaining ½ sheet of hydrated and drained gelatin and program.
10 seconds / Speed 3.
Pour the mixture into a bowl, cover with transparent film attached to the cream so that it does not form a crust and let cool for a few minutes.
When cool, pour this cream over the chilled cheesecake and spread over top. Again refrigerate for a minimum of 1 hour.
