Coffee foam with thermomix

Preparation

1. A few hours before starting to make this dessert we will have to put coffee in an ice bucket to freeze in such a way that coffee cubes come out.
2. A few hours later…
3. Add the 50 grams of sugar to our Thermomix bowl and grind
4. 10 seconds / progressive speed 8-9-10
5. We add the 250 grams of frozen coffee cubes and program
6. 10 seconds / progressive speed 8-9-10
7. we put the butterfly, and add the egg white and program
8. 6 minutes / speed 4.
9. We serve immediately the coffee foam
