This recipe has been sent by our friend Luz Maria Lagoa Vives. Hi guys, well, as I had frozen egg whites from other preparations, today I made the sponge cake that I gave you a while ago, only I added 1/4 more to the recipe.
And I’ve made them like cupcakes, with a lemon glaze on top. I got 14. If you haven’t tried them, do them, I assure you that they come out spectacular. Very fluffy and with a brutal citrus flavor. I hope you like them and I encourage you to do so. ??

Ingredients for lemon bites with thermomix
BISCUIT
150 grams flour
8 egg whites (M), at room temperature
125 grams sugar
63 ml sunflower oil
88 ml lemon juice (strained)
Lemon zest
1 on chemical yeast
pinch of salt
GLAZED
80 ml lemon juice (strained)
370 grams condensed milk
Preparation of lemon sandwiches with thermomix

All the ingredients to the glass and
20 seconds / speed 3’5
Pour into a bowl, cover and place in the fridge for a minimum of 2 hours so that it takes shape and is firm.
BISCUIT
We turn on the oven at 180°, heat up and down
We sift the dry ones (flour, yeast and salt),
20 seconds / speed 8
we reserve
Place in the glass, oil, sugar, juice and lemon zest,
1 minutes / speed 3
we set aside and reserve.
With the glass and butterfly extremely clean and dry, add the egg whites, salt and drops of lemon juice, program
9/10 minutes / speed 3’5 (they have to be about firm snow).
We remove the vowel, and we are adding the previous mixture, while we continue beating at speed 3.5, we stop and remove the butterfly, now we add the reserved dry
10 seconds / speed 4
We finish mixing with a spatula. We line the mold with baking paper, turn the dough over, tap it lightly against the table, to remove any air bubbles. We baked about 25/30 min (mine was in 25 min).
After checking the toothpick, it comes out clean
Take out, let warm to be able to unmold, unmold and let cool on wire rack
FORMED
We remove the cream from the fridge and we can place it with a spatula, or in a pastry bag as it is in my case. Decorate and sprinkle zest on top
