This is the recipe for aubergine parmigiana with Thermomix.

Eggplant Parmesan recipe with the Thermomix
Ingredients
- Of course, the first thing to do is to buy all the foods that are indispensable for making this recipe, which will allow you to get between 7 and 8 portions:
- 4 aubergines.
- Some fresh basil.
- Olive oil.
- About 600 - 700 grams of tomato sauce.
- 2 slices of bread.
- 60 grams of spinach.
- 150 grams of parmesan cheese.
- 150 grams of mozzarella.
Instructions
- When you have all the ingredients in the kitchen, the expected time comes to put on your apron and prepare the dish in question:
- Start by putting the two slices of bread, in pieces, into the food processor. Chop them up for about 10 seconds at speed 6.
- Once the bread has been chopped, it should be removed and set aside.
- The Parmesan cheese should then be chopped in the Thermomix for about 10 - 15 seconds at speed 8.
- When it is ready, put it aside and then fry the aubergines, properly peeled and sliced.
- When ready, place them on a greased baking tray.
- In particular, they will be placed on several floors and over them the tomato sauce, chopped basil and the two cheeses will be poured. And so on until the ingredients are exhausted.
- Then cover the entire contents with the bread that was shredded at the beginning and pour a little oil over it.
- The last step is to put the tray into the oven to keep it there for half an hour at about 200º.
