Ingredients
21 grams of fresh pressed yeast
155 grams of cooked chestnuts already peeled
505 grams of water
1 teaspoon salt
355 grams of wheat flour
1 spoon of sugar
155 grams of chestnut flour
Preparation
When you have gathered all those ingredients, follow the steps below:
Add the yeast, the chestnut flour, half the water, the wheat flour, the sugar and the salt. Program a
spike speed / 2 minutes.
Then add the chestnuts and program to
spike speed / 30 seconds.
Roll the dough from the glass into a ball and put it in a bowl. Cover with cling film. Let it sit for at least three hours.
Put the dough on a counter and add a little flour to it. Roll it back into a ball and put it on a baking tray, lined with greaseproof paper. Cover it with a clean kitchen towel and let it sit for an hour and a half.
Use a refractory container to put it in the oven, specifically in the lower area, and put it to work at about 210º.
When it is hot, pour half the water into the aforementioned container and insert the tray with the dough. Bake at the same temperature for about 27 minutes.
