The fish is a rich white meat with a high nutritional value, for this recipe we recommend dogfish, for its low fat content, for its proportion of proteins of high biological value and for its flavor is exquisite.
Battered Dogfish with Thermomix

Battered Dogfish with Thermomix
Ingredients
- 1 kg. of dogfish
- 3 - 4 cloves of garlic.
- 1 spoonful of sweet paprika.
- 1 spoonful of oregano.
- 1 teaspoon of cumin powder.
- 150 ml of white vinegar or sherry vinegar
- 100 ml of water.
- 2 leaves of dry laurel.
- 100 grams of dry chickpeas.
- 200 grams of flour.
- Oil for frying.
- Note: The 200 grams of flour and the 100 grams. Of dry chickpeas we will use them to coat the dogfish before frying.
Instructions
- The dogfish must be previously cleaned, skinned and cut into medium sized pieces.
- The duration of its pairing must be at least 6 hours. So keep in mind this time.
- Use the Thermomix glass to crush and mix the ingredients for the pairing.
- Add the 4 cloves of garlic, the spoonful of sweet paprika, the spoonful of powdered oregano, the teaspoon of cumin, the 150ml of the vinegar of your preference and the 100ml of water. 30 seconds / speed 10.
- Once all the ingredients have been mixed, add them to a container suitable for refrigeration and submerge the pieces of dogfish so that they absorb all the flavors very well. Cover and refrigerate.
- At least after 6 hours, proceed to the preparation. Again in the glass of the thermomix add the 200 grs. of flour and the 100 grs. of dry chickpeas to crush them 40 seconds / speed 10.
- In the meantime, drain well the fish mixture and place it on a tray with absorbent paper.
- Then, preheat a frying pan and add enough oil to fry.
- On the other hand, in a tray, add the dry chickpea and flour mixtures and wrap each piece of dogfish in it.
- Fry for approximately 5 minutes each side or until golden brown.
- Let stand on absorbent paper.
- And serve.
- You can decorate a plate with some clean and fresh lettuce leaves and place the dogfish on the lettuce bed. Enjoy this delicious dish and I invite you to comment on the result of this preparation. Until the next recipe.
