Let’s be honest: there are days when you just want a good plate of fries 🥔🔥. But between the oil, the smell that lingers in the kitchen and the heavy feeling afterwards… many times we end up giving up. This is where this recipe comes in as a quiet hero.
These air fryer garlic fries give you exactly what you’re looking for: golden and crispy exterior, tender interior, and a garlic and paprika aroma that makes you salivate before trying the first one 😋. All this using much less oil and without complicating your life.
The best thing is that you don’t need weird techniques or difficult ingredients. It’s just the usual potatoes, garlic, basic spices and an air fryer working its magic. It is one of those recipes that you start as a “side dish” and ends up stealing the spotlight from the dish. It happens to me constantly… I make meat or fish and in the end everyone talks about it. the potatoes 😂.

Air Fryer Garlic Fries
Compared to traditional French fries, here you gain in cleanliness, speed and control. And compared to baked potatoes, the air fryer gets that uniform browning much sooner ⏱️. They are ideal for informal dinners, impromptu barbecues, tapas with friends or even to take in a tupperware.
Grades: You can use vegetable oil if you prefer a more neutral flavor. For the vegan version you don’t have to change anything (it already is 😉). If you like it spicy, add a pinch of hot paprika or chili.
Having everything ready before starting makes the recipe flow stress-free 😌.
What you need:
Air fryer of at least 4 L, a sharp knife, cutting board and a large bowl.
Useful accessories:
Kitchen tongs or wooden spoon for stirring. Perforated paper for airfryer if your basket tends to stick.
Mise en place:
Wash and cut the potatoes, chop the garlic and measure the spices. All this will not take you more than 10 minutes and saves you from rushing later ⏳.
Wash the potatoes well. You can peel them or leave the skin on. Cut them into 3–5 mm slices or irregular bratkartoffeln-like pieces. The uniform thickness helps them cook evenly.
Place the potatoes in a large bowl. Add the oil, paprika, salt, pepper and dried herbs if using. Mix well until they are all slightly shiny.
Peel and chop the garlic very finely or into slices. Add it to the bowl and mix carefully so that it is distributed without breaking the potatoes.
Preheat the air fryer to 200°C for 3 minutes. This helps the potatoes start to brown from the first moment 🔥.
Place the potatoes in the basket in as even a layer as possible. Cook at 200°C for 18–25 minutes. After 10 minutes, shake the basket or stir for even browning.
After 18 minutes, check: they should be golden on the outside and tender on the inside. Adjust the time based on your fryer and the size of the cut.
🌟 Secrets for success:
– Do not wash the potatoes after cutting them: the starch helps the crispiness.
– Better a little well-distributed oil than too much.
– If you make a large quantity, cook in two batches.
❌ Common mistakes:
Problem: soft potatoes.
Cause: too many joints or low temperature.
Solution: more space and real 200°C.
🔥 Spicy version: add dried chili or hot paprika.
🧀 Parmesan version: Sprinkle grated cheese at the end and cook 2 more minutes.
🌱 Mediterranean style: rosemary, thyme and a touch of lemon.
👧 Kids-friendly: no garlic, just mild salt and oil.
🥓 Extra indulgent: add crispy bacon when serving.
Serve them freshly made, with fresh parsley on top 🌱. They go great with meat, fish, hamburgers or eggs. For a snack, serve with aioli, yogurt sauce or homemade ketchup. Drinks: cold beer, soda or water with lemon.
🥡 Fridge: Up to 2 days in an airtight container.
❄️ Freezing: not recommended.
♨️ Reheat: 3–5 minutes in the fryer to recover the crispiness.
Can I use frozen potatoes?
Yes, but this recipe shines more with fresh potatoes.
Does garlic burn?
Not if it is well mixed with the oil.
Are they the same as fried?
Very close, and much lighter 😉.
