Frigo Pie is a classic that never goes out of style, and recreating it at home with the Thermomix is a true marvel. Thanks to the touch of mascarpone cheese we achieve a spectacular creaminess that perfectly imitates the texture of the original.
Furthermore, the use of invert sugar is the great secret of this recipe, since it prevents the ice cream from crystallizing in the freezer. The result is an irresistible dessert, with an intense natural strawberry flavor that will fascinate both the little ones and the older ones in the house.

Frigo strawberry pie ice cream with Thermomix
We put the strawberries in the glass (in this case frozen) along with the splash of lemon juice. We program 3 minutes, at 90° and Speed 2. Next, we grind for 40 seconds at Speed 6/7.
We pour the strawberry puree obtained into a bowl and let it cool completely. If you prefer it for a finer texture, you can strain it in this step.
We place the butterfly on the blades of the Thermomix. We add the cream and sugars to the glass, and semi-whip, programming at Speed 3.5.
Add the mascarpone cheese to the glass and mix, programming for 20 seconds at Speed 3.5.
Pour the mixture into a large bowl and gradually add the reserved strawberry puree, using gentle, enveloping movements to maintain the sponginess.
We transfer the cream to a pastry bag to fill the molds in a cleaner and more comfortable way. We fill the chosen molds and place them in the freezer for a minimum of 6 hours.
Once the freezing time has passed, we can carefully unmold the ice creams.
It is highly advisable to take out the ice cream about 15 minutes before tasting it so that it acquires maximum creaminess. ONLY LEFT TO ENJOY, BONUS!
