A dish with an oriental air, full of color, with that perfect balance between the sweetness of the brown sugar and the salty touch of the soy sauce. The best: it is prepared almost without oil, in less than 15 minutes and with a flavor worthy of a restaurant. Ideal for when you want to eat healthy, tasty and without complications.

Air Fryer Chicken and Mushroom Stir-Fry
🍗 450 g chicken breasts pitted, cut into small pieces
🫒 1 tbsp EVOO (extra virgin olive oil)
🥢 60 ml soy sauce
🍬 2 tbsp brown sugar
🌶️ 1 tsp hot paprika (you can use sweet if you prefer less intensity)
🫚 1 tsp ground or grated fresh ginger
🧅 100 g sweet onion julienne
🍄 100 g Portobello mushrooms julienne
🌶️ 1 red pepper in strips
🟠 1 orange or yellow bell pepper in strips
In a bowl, mix the olive oilthe soy saucehe brown sugarhe paprika and the ginger.
Beat well until you obtain a homogeneous sauce.
Place the chicken pieces in a deep container or zip-type bag and pour the marinade.
Stir so that they are completely impregnated and let rest for 30 minutes to 1 hour in the refrigerator.
(💡 This step is key so that the chicken is juicy and full of flavor).
If your air fryer has a removable grill, remove it.
Spray a little oil in the basket to prevent the mixture from sticking.
Place the chicken with all the marinadealong with the onion, mushrooms and peppers.
Stir lightly so that everything is integrated.
Set your fryer to mode “Air Fry” at 195°C (380°F) during 9 minutes.
Halfway through cooking (after about 4–5 minutes), open the basket and stir to ensure uniform cooking.
When the chicken is golden brown and the vegetables are tender but crispy, it is ready.
Serve your stir fry hot, straight from the air fryer.
You can accompany it with jasmine rice, noodles or quinoaor enjoy it as is as a light single dish.
A final touch of toasted sesame seeds either fresh cilantro It gives it that gourmet air that turns a simple homemade dish into something special.
