Today we bring a dish full of color and flavor, it is about we have rigatoni (we can also make it with macaroni) that we call gazpacho, for its sauce made with coriander tomato, and some toasted crumbs with hard-boiled egg

Ingredients
400 grams of pasta (rigatonni or macaroni)
200 grams of ripe tomatoes
120 grams of peppers
75 grams of white bread with crust
75 grams of white bread crumb
150 grams of zucchini
100 grams of canned tomato sauce
1 teaspoon salt
1/2 teaspoon cayenne pepper
600 grams of water (room temperature)
2 Eggs
12º Green coriander stem
2 cloves of garlic
30 grams of apple cider vinegar
70 grams of olive oil
100 grams of mineral water
Preparation
To start our recipe we put the white bread without crust in our Thermomix bowl and chop
20 seconds / reverse turn / speed 5
We transfer to a bowl and reserve
We put the rest of the bread and chop
20 seconds / speed 8
add the vinegar and 40 grams of oil and mix
5 seconds / speed 4
add the peppers, tomatoes and zucchini and mash them
15 seconds / progressive speed 6-10
add tomatoes salt and cayenne and program
5 seconds / speed 5
We put everything in the bowl and put it in the fridge for two hours
clean our Thermomix bowl and dry
We put the water in our Thermomix bowl, put the eggs with the basket and program
15 minutes / speed 1
While the eggs are being made, we put 30 grams of oil in a pan and toast the white bread that we have crushed until it is golden, put it in a bowl and let it cool
We remove the basket with the spatula so as not to burn ourselves and we peel the eggs, empty the Thermomix bowl and dry it
We put the coriander in the glass and chop it

with the spatula we put the pieces glued on the sides down
add the boiled eggs and chop

add the breadcrumbs that we have allowed to cool and mix

we transfer everything into a bowl and reserve
We put plenty of water in our Thermomix bowl, add the garlic, salt and pasta and cook according to the instructions on the package.

We take out the pasta and store in a bowl
We empty the Thermomix bowl, put the sauce and mineral water inside and crush

if we add salt to taste
It is not the pasta in a source we put the cold sauce on top we put the chopped egg on top of the crumbs with the coriander and our dish will be ready
