This recipe has been made by our friend Luz María Lagoa Vives. Today we bring you some tuna dumplings that are super good, and very easy to make with our thermomix as always.

Ingredients for tuna, egg and pepper dumplings with thermomix
STUFFED
5 boiled eggs
3 garlic cloves
350 gr cabollas
250 gr red pepper
160 gr green pepper
375 gr crushed tomato (from can)
140 ml olive oil
1 teaspoon salt
Pinch black pepper
425 gr natural tuna (drained)
MASS
650 gr strength flour
15 g fresh yeast
pinch of sugar
195 ml cooking liquid
90 ml white wine
1 and a half teaspoons of salt
90 gr lard (TA)
1 beaten egg (for brushing)
Preparation of tuna, egg and pepper dumplings with thermomix
STUFFED
Eggs in the glass,
3 seconds / speed 3.5.
We set aside and reserve
Oil, garlic, onions, peppers, crushed tomato, salt and pepper,
6 seconds / speed 4.
Now, without a beaker,
16 minutes / 120°C / left or reverse rotation / speed 1.
Pour into a strainer to collect the cooking liquid.
We mix the vegetables with the chopped eggs and the crumbled and drained tuna.
Let it cold down
MASS
We pour 195 ml of the broth into the glass, along with the wine, sugar and yeast,
5 seconds / speed 5.
Now half the flour and salt,
5 seconds / speed 4,
finally the remaining flour and butter,
4 minutes / spike speed.
Pour into a lightly greased bowl and cover.
We let it increase in size (1: 30 minutes / approximately)
FORMED AND BAKED
We divide the dough in 2.
We stretch each piece with a rolling pin as much as possible so that we have a thin dough.
With the help of a container or whatever we have, we make circles of about 18/20 cm in diameter.
We place a little filling in the middle, moisten the edges a little, and join the two masses.
We place it on a baking tray lined with paper.
Preheated oven to 180°C / heat up and down.
Brush with beaten egg and bake in batches for about 25 minutes or until golden brown.
