Walnut and carrot muffins ingredients with thermomix
280 grams of wheat flour
2 teaspoon chemical yeast
1 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon nutmeg
1 teaspoon bicarbonate of soda
pinch of salt
2 eggs (M)
125 ml buttermilk (115 ml milk + 10 ml lemon juice
90 grams of brown sugar
200 grams of carrots
80 grams of nuts
65ml sunflower oil
65 grams butter melted and cold
Preparation of Walnut and carrot muffins with thermomix
Preheat the oven to 180°C / heat up and down
We are going to proceed to sift the dry ones (flour, yeast, bicarbonate, cinnamon, nutmeg, ginger and salt),
10 seconds / speed 8
pick up and reserve.
Now we chop the nuts,
4 seconds / speed 5
remove and reserve, now the carrots, which we will have previously peeled and cut into large pieces,
6 seconds / speed 5
pick up and reserve.
We place the butterfly in blades, add the eggs and sugar, program

Add the buttermilk (milk and juice that we will have left to act for a few
10 minutes / so that it has the appearance of being cut (this will give our cupcakes or muffins more fluffiness),

then while we continue beating at the same speed, we add the melted butter for the vowel, it is time to add the reserved carrot and walnuts, we mix

Fill the 3/4 parts of the capsules, bake some
20/25 minutes / or until checking the toothpick, it comes out clean
